Simmered Apples with Pineapple Guava
4-6 tart organic apples, peeled, cored and roughly chopped
10-12 pineapple guavas cut in half and fruit scooped out
2 cups water
1/3 cup coconut sugar
1 teaspoon ground cinnamon or 1 cinnamon stick
6 whole cloves
1 teaspoon pure vanilla extract
½ cup walnuts

In medium saucepan, combine chopped apples, pineapple guava pulp, 2 cups water, 1/3 cup coconut sugar, cinnamon stick, cloves and stir. Bring apple mixture to a boil then reduce heat and simmer for 15- 20 minutes or until soft. Stir in vanilla extract. Remove cinnamon and cloves spices before serving. Garnish with walnuts.

These little pineapple guavas are really delicious and tart. They simply fall from the shrub when they are ripe so it’s just a foraging on the ground below! These were grown at the Atlanta Botanical Garden but due to their love of sub tropical weather, they flourish best in South America. Full of vitamin C and loaded with antioxidants, these little treats can be eaten raw or cooked. They are a perfect addition to your daily green smoothie or simmered with your favorite apples for warm delicious treat or topping.
