Wilted Swiss Chard and Lentils with Feta

  

Wilted Swiss Chard and Lentils with Feta 

1 cup dried lentils

2 cups water

1 teaspoon fresh thyme, chopped

½ teaspoon ground cumin

¼ teaspoon sea salt

Fresh cracked pepper to taste

2 tablespoons extra virgin olive oil

1 sweet onion, diced

3 cups chopped Swiss chard, leaves and stems

2 garlic cloves, minced 

1/2 cup crumbled feta

Place 1 cup rinsed lentils in a large saucepan with 2 cups waterBring to a rapid simmer over medium high heat then reduce heat to low, and simmer 20 minutes or until tender. Drain well.  Season lentils with fresh thyme, ground cumin, sea salt and pepper to taste.  


In sauté pan heat olive oil on medium high heat and add diced onion.  Sauté onions for 3-4 minutes or until translucent.  Add chopped Swiss chard and toss in pan and cook for 2 minutes to wilt before adding minced garlic and cook for additional 1 minute.  


Add seasoned lentils to wilted chard and gently toss in pan.  Sprinkle with crumbled cheese to serve.

So wonderful to have this gorgeous Georgia weather! Not only is this warm Spring weather advantageous for all the movie and television productions being filmed here, it is also great for our state’s economy with all the produce and edibles grown here.  Produce and country music stars seem to be born and raised here. Perhaps veggies grow better with a little fiddle playing on warm summer evenings down in the holler… Seems like we can also finally find some healthy fixin’s here as well, especially with all of Hollywood traipsing the street of Atlanta.  Check out that fab new juice bar you just saw opening down the road or come to the Atlanta Botanical Garden this summer season for some delicious, healthy recipes while enjoying a romp amongst the latest and greatest growing edibles!!  Cheers, Megan
