Easy Gluten-Free Banana Bread

Easy Gluten-Free Banana Bread

  • 1 1/2 cups garbanzo flour (chickpea flour)
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 medium ripe bananas, mashed
  • 2 tablespoons honey
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon apple cider vinegar

Optional:

  • 1/2 cup chocolate chips
  • 1/2 cup chopped raw walnuts or pecans

Preheat oven to 350◦. Line a 9 x 4-inch loaf pan with parchment paper and spray with coconut oil spray.

In a medium bowl, combine garbanzo flour, baking soda, cinnamon, and sea salt and stir.

In a separate bowl, combine mashed bananas, honey, vanilla, eggs, coconut oil, and apple cider vinegar and mix until well combined. 

Add dry ingredients to wet ingredients and mix until combined.  Fold in additional options such as walnuts, pecans, or mini chocolate chips.

Pour batter into prepared pan and bake for 40-45 minutes. 

Remove from the oven and let cool for 10 minutes.  Remove bread from pan to cool completely.
