Spicy Eggplant Stir-Fry Recipe Inspired by What is Growing in the Garden

Eggplant Weekend at the Atlanta Botanical Garden

There’s nothing better than cooking with vegetables harvested at their peak. This past weekend at the Atlanta Botanical Garden’s Edible Garden Outdoor Kitchen, we celebrated the summer harvest with a vibrant Spicy Eggplant Stir-Fry featuring both globe eggplant and Turkish eggplant. Combined with juicy tomatoes, spicy peppers, fresh ginger, garlic, crunchy peanuts, and served over simple rice noodles, this colorful dish proved that fresh, seasonal ingredients are all you need for an unforgettable meal.

Using two varieties of eggplant added both flavor and texture. Globe eggplant becomes silky and creamy as it cooks, while Turkish eggplant is naturally sweeter with a thinner skin and fewer seeds, making it perfect for quick stir-fries. Together, they created the perfect base for a savory peanut sauce with just the right amount of heat.

It’s in the Sauce

One of the best parts of this recipe is its flexibility. Fresh basil added brightness, spicy peppers provided a little kick, and roasted peanuts brought satisfying crunch and plant-based protein. Tossing everything over rice noodles transformed the stir-fry into a complete meal that’s naturally gluten-free when prepared with tamari instead of soy sauce. This peanut sauce is great to use on so many other foods all year round, so keep this recipe on hand!

One of the stars of this recipe is the combination of fresh ginger and garlic. These two aromatic ingredients create the flavorful foundation of countless dishes and transform simple vegetables into something extraordinary. Fresh ginger adds a bright, slightly spicy warmth, while garlic provides a rich, savory depth that balances the sweetness of the peanut sauce. I consider both garlic and ginger as natural healing foods, so I like to include them in my daily repertoire!

To finish the dish, we tossed everything with simple rice noodles. They cook in just a few minutes and provide the perfect canvas for the spicy peanut sauce without competing with the fresh garden vegetables. Their delicate texture makes this recipe hearty enough for dinner while still keeping it light and fresh during the warm summer months.

Fresh in the Edible Garden

One of my favorite things about cooking in the Edible Garden is that the freshest ingredients rarely need complicated techniques. A hot skillet, a handful of seasonal vegetables, fragrant ginger and garlic, and a flavorful sauce are often all it takes to create a meal that’s both nourishing and satisfying.

Whether you’re harvesting eggplant from your own garden, visiting your local farmers market, or picking up fresh produce from the grocery store, this Spicy Eggplant Stir-Fry is an easy way to celebrate the flavors of summer. It’s colorful, packed with vegetables, comes together quickly, and is a delicious reminder that eating more plants can be both simple and incredibly flavorful.

I hope you’ll enjoy making this recipe at home and discover just how delicious fresh seasonal produce can be. Happy cooking!
