Sunshine on a Plate with this Fresh Orange Fennel Salad

Certain recipes instantly transport you to a beautiful day in the garden, and this Orange Fennel Salad is one of them.

One of the highlights of my recent Garden Chef Demo at the Atlanta Botanical Garden was this colorful salad featuring sweet oranges, crisp fennel, peppery arugula, crunchy pistachios, and shaved Grana Padano cheese. It’s a beautiful reminder that simple, seasonal ingredients can create something truly memorable.

Why we love this:

I love this recipe because every ingredient brings something special to the plate. The juicy oranges provide natural sweetness and bright citrus flavor, while thinly sliced fennel adds refreshing crunch and a subtle hint of anise. Fresh arugula contributes a peppery bite that balances the sweetness, and toasted pistachios add texture, healthy fats, and satisfying crunch. Finished with delicate shavings of Grana Padano, the salad gains a rich, nutty depth that ties everything together.

Beyond its beautiful presentation, this salad is packed with nutritional benefits. Oranges are rich in vitamin C and antioxidants, fennel provides fiber and beneficial plant compounds, and pistachios offer heart-healthy fats and protein. It’s a dish that feels indulgent while supporting a healthy lifestyle. Remember, fiber is the new fiber! #fiberisthenewfiber

Versatility

One of my favorite things about this salad is its versatility. It can be served as a light lunch, an elegant first course, or a colorful side dish for everything from grilled seafood to roasted chicken. It’s equally at home at a garden gathering, holiday table, or weeknight dinner.

As the Edible Garden chef, I’m constantly reminded that healthy eating doesn’t have to be complicated. Sometimes the most satisfying dishes come from pairing a few fresh ingredients at their peak and allowing their natural flavors to shine. It is creating recipes “from the ground up!”

If you’re looking for a fresh way to celebrate citrus season, I hope you’ll give this Orange Fennel Salad a try. It’s a little taste of sunshine, inspired by the beauty of the garden and the joy of eating well.

Happy healthy eating!
