2cansgreen jackfruit in waterdrained, rinsed and chopped
2Tbsp.avocado oil
1red onion diced
3-4clovesfresh garlicminced
1chipotle pepper in adobo sauce
1Tbsp.adobo sauce
1/2cupwater or veggie broth
1tsphoney (optional)
1limejuiced
1tspground cumin
1smoked paprika
1/2tsponion powder
1Tbsp.low sodium tamari
1/4tspsea salt
Instructions
Heat the oil in a large skillet over medium-high heat. When hot, add the onions and garlic and sauté for about 5 minutes until the onions have softened and begun to brown.
Add the chopped jackfruit, water, chipotle pepper, adobo sauce, honey, lime juice, cumin, paprika, onion powder, tamari, sea salt, and cover. Reduce heat and let it simmer until the jackfruit softens slightly for about 5 minutes.
Use a potato masher or forks and smash all the jackfruit up to get that shredded texture. Serve with favorite taco toppings.
