Easy Gluten-Free Banana Bread

Ingredients
  

  • 1 1/2 cups garbanzo flour (chickpea flour)
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 3 medium, ripe bananas, mashed
  • 2 tbls honey
  • 2 tsp vanilla extract
  • 2 large eggs
  • 2 tbls coconut oil, melted
  • 1 tsp apple cider vinegar
  • 1/2 cup chocolate or carob chips optional
  • 1/2 cup chopped raw walnuts or pecans optional

Instructions
 

  • Preheat oven to 350◦. Line a 9 x 4-inch loaf pan with parchment paper and spray with coconut oil spray.
  • In a medium bowl, combine garbanzo flour, baking soda, cinnamon, and sea salt and stir.
  • In a separate bowl, combine mashed bananas, honey, vanilla, eggs, coconut oil, and apple cider vinegar and mix until well combined. 
  • Add dry ingredients to wet ingredients and mix until combined.  Fold in additional options such as walnuts, pecans, or mini chocolate chips.
  • Pour batter into prepared pan and bake for 40-45 minutes. 
  • Remove from the oven and let cool for 10 minutes.  Remove bread from pan to cool completely.
