Roasted Red Cabbage with Goat Cheese

Roasted red cabbage and goat cheese! Transform your cabbage and create this perfect side dish in only 15 minutes.

Ingredients
  

  • 1/2 whole red cabbage, sliced into ¾ inch “steaks”
  • 2 tbsp extra virgin olive oil
  • 1 pinch sea salt
  • Freshcracked pepper to taste
  • 2 tbsp aged balsamic vinegar
  • 1/4 cup crumbled goat cheese
  • Parsley leaves for garnish

Instructions
 

  • Preheat oven to 400◦.
  • Slice red cabbage into 1/2-inch-thick slices, cut from a wholecabbage. 
  • Place cabbage “steaks” on a parchment lined baking sheet.  Brush ormist sliced cabbage with extra virgin olive oil, season with sea salt andpepper. 
  • Drizzle with aged balsamic vinegar and finish with crumbled goat cheeseand garnish with parsley to serve.
