Roasted Red Cabbage with Goat Cheese

Roasted red cabbage and goat cheese! Transform your cabbage and create this perfect side dish in only 15 minutes.

- 1/2 whole red cabbage, sliced into ¾ inch “steaks”
- 2 tbsp extra virgin olive oil
- 1 pinch sea salt
- Freshcracked pepper to taste
- 2 tbsp aged balsamic vinegar
- 1/4 cup crumbled goat cheese
- Parsley leaves for garnish
Preheat oven to 400◦.
Slice red cabbage into 1/2-inch-thick slices, cut from a wholecabbage.
Place cabbage “steaks” on a parchment lined baking sheet. Brush ormist sliced cabbage with extra virgin olive oil, season with sea salt andpepper.
Drizzle with aged balsamic vinegar and finish with crumbled goat cheeseand garnish with parsley to serve.
