Oven Toasted Granola with Fresh Blueberries

“Homemade granola is always great to have on hand for a quick go-to breakfast or even as a late-night snack that is low in sodium and naturally sweet enough to satisfy your cravings.  Most store-bought granola tends to be too hard and crunchy and has a packaged taste with a lot less flavor,” Chef Megan explains.  It can be so easy to put together a great combination of your favorite ingredients to make a simple “craveable” food thus making it it easier to maintain a healthy and satisfying everyday eating lifestyle.


Oven Toasted Granola with Fresh Blueberries
2 cups gluten free rolled oats
1/2 cup shredded unsweetened coconut
1/2 cup sliced raw almonds
1/2 cup raw sunflower seeds
2 tablespoons chia seeds
1/2 teaspoon ground cinnamon
1/4 teaspoon ground ginger
dash freshly ground nutmeg
dash sea salt
2 tablespoons warmed coconut oil
1 tablespoon local honey
1/4 cup almond milk or coconut milk beverage

Preheat oven to 350 degrees. In large mixing bowl, combine oats, shredded coconut, almonds, sunflower seeds, cinnamon, ginger, nutmeg, sea salt and stir. Add warmed coconut oil, honey and almond milk and mix until oats are slightly wet.
Line a rimmed baking sheet with parchment paper and spread mixture evenly onto pan. Bake for 20 minutes or until toasted.
Let cool before storing in an airtight container. Serve with Optional plain organic whole milk yogurt and top with fresh blueberries for a delightful day.
