Good Morning Granola


Good Morning Granola
2 cups rolled oats
1/2 cup shredded unsweetened coconut
¼ cup coconut sugar or cane sugar
½ cup raw sliced almonds
½ cup dried banana chips, chopped
¼ cup ground flaxseed or chia seeds
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
Dash of fresh ground nutmeg
Dash of sea salt
1/2 teaspoon vanilla extract
2 tablespoons grape seed oil
¼ cup almond or coconut milk

Preheat oven to 350◦. In large mixing bowl, combine dry ingredients. Add vanilla, oil and almond milk and combine. Line a rimmed baking sheet with parchment paper and spread mixture evenly onto pan. Bake for 20 minutes, stirring once. Let cool before storing in an air tight container. Serve with yogurt, fresh fruit (pomegranate seeds pictured) or your favorite alternative milk beverage.

What a great way to start the day and the New Year!  Making your own granola is quick and easy and a great habit to take on for your best health and well-being.  The ingredients are already in your pantry and you can create your own recipe with whatever you DO have on hand.  Change the nuts, seeds, and dried fruits to your heart’s content.  Just make sure to add those dried cranberries after you bake the granola.  Enjoy each yummy bite!
